  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • 1 cup shredded cheese
  • 1 avocado, diced

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the chicken broth, black beans, corn, diced tomatoes, onion, garlic, chili powder, cumin, salt, and pepper.
  3. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the slow cooker.
  5. Serve hot, topped with tortilla strips, shredded cheese, and avocado.
