Slow Cooker Lemon Herb Chicken and Rice

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix the chicken broth, lemon juice, zest, garlic, thyme, oregano, salt, and pepper.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Add the rice and stir to combine.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. Add the frozen peas during the last 30 minutes of cooking.
  7. Once cooked, fluff the rice with a fork and serve warm.
