Slow Cooker Lemon Herb Chicken and Rice

A delicious and easy recipe for slow cooker lemon herb chicken and rice that the whole family will enjoy.

Ingredients

  • 4 chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a slow cooker, combine rice, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
  2. Place the chicken thighs on top of the rice mixture.
  3. Drizzle olive oil over the chicken.
  4. Cover and cook on low for 6-8 hours or high for 4 hours until the chicken is cooked through.
  5. Once done, fluff the rice with a fork and serve hot.

Notes

  • For extra flavor, marinate the chicken in lemon juice and herbs a few hours before cooking.
  • Try serving with steamed vegetables for a complete meal.
