SLOW COOKER MOROCCAN CHICKPEA STEW

  • 2 cans chickpeas, drained
  • 1 cup diced tomatoes
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 2 cups spinach, chopped
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In the slow cooker, combine chickpeas, tomatoes, onion, carrots, bell pepper, garlic, cumin, coriander, paprika, cinnamon, and cayenne.
  2. Add vegetable broth and stir to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. In the last 30 minutes of cooking, add spinach and cilantro.
  5. Stir well before serving.
