Slow-Cooker White Chicken Chili

A delicious and comforting slow-cooker white chicken chili that is perfect for any occasion.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 can diced green chiles
  • 1 can white beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 onion, chopped
  • 1 cup corn, frozen or canned
  • 1 cup sour cream
  • 1 cup shredded cheese, for topping

Instructions

  1. In a slow cooker, combine the chicken, chicken broth, green chiles, white beans, cumin, chili powder, garlic powder, onion, and corn.
  2. Cook on low for 6-8 hours or on high for 4 hours.
  3. Once cooked, shred the chicken with two forks and stir in the sour cream.
  4. Serve hot, garnished with shredded cheese.

Notes

  • For a spicier chili, add diced jalapeños.
  • Can be served with tortilla chips or bread.
