Southwest Pasta Salad

Ingredients

  • 8 ounces pasta
  • 4 strips turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions. Drain and let cool.
  2. In a skillet, cook turkey bacon until crispy. Chop into pieces.
  3. In a large bowl, combine cooked pasta, turkey bacon, cherry tomatoes, black beans, corn, red onion, bell pepper, and cilantro.
  4. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad can be made a day in advance for better flavor.
  • Feel free to add avocado or other vegetables of your choice.
