- 8 ounces pasta
- 4 strips turkey bacon
- 1 cup cherry tomatoes, halved
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Cook the pasta according to the package instructions. Drain and let cool.
- In a skillet, cook turkey bacon until crispy. Chop into pieces.
- In a large bowl, combine cooked pasta, turkey bacon, cherry tomatoes, black beans, corn, red onion, bell pepper, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
