  • 2 cups fresh spinach
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add sun-dried tomatoes and fresh spinach to the skillet. Cook until spinach is wilted.
  4. Pour in heavy cream and season with salt and pepper. Stir well and bring to a simmer.
  5. Add cooked spaghetti to the skillet and toss to combine.
  6. Sprinkle grated Parmesan cheese on top before serving.
