Spiced Apple Cider Donut Loaf with a Cinnamon Sugar Crust

  • 1 cup apple cider
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar, for topping
  • 1 tablespoon ground cinnamon, for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine the melted butter and granulated sugar.
  3. Add the eggs and apple cider to the mixture and whisk until combined.
  4. In another bowl, mix together the flour, baking powder, baking soda, spices, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. In a small bowl, mix together the brown sugar and additional cinnamon.
  8. Sprinkle the cinnamon sugar mixture over the top of the batter.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a deeper flavor, you can use spiced apple cider.
