  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat the oven to 325°F (162°C).
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Add the pumpkin puree, sugar, and vanilla extract. Mix until well combined.
  4. Beat in the eggs one at a time, then add the spices.
  5. Pour the filling over the crust and smooth the top.
  6. Bake for 50-60 minutes or until set. Let it cool and refrigerate for at least 4 hours before serving.
