Spicy Butternut Squash and Sweet Potato Soup

  • 1 medium butternut squash
  • 2 medium sweet potatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Add cubed butternut squash and sweet potatoes, stirring for a few minutes.
  3. Pour in vegetable broth and add spices. Bring to a boil, then reduce heat and simmer until vegetables are tender.
  4. Use an immersion blender to puree the soup until smooth. Adjust seasoning if necessary.
  5. Serve hot, garnished with a drizzle of olive oil.
