Spicy Shrimp Rice Bowl

  • 1 pound shrimp, peeled and deveined
  • 1 cup jasmine rice
  • 2 cups water
  • 3 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rice and water, bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  3. In a large skillet, heat olive oil over medium heat. Add the shrimp to the skillet.
  4. Sprinkle the chili powder, garlic powder, paprika, salt, and black pepper over the shrimp.
  5. Sauté the shrimp for 5-7 minutes until they are pink and opaque.
  6. Stir in the lime juice and remove from heat.
  7. Fluff the cooked rice with a fork and divide among bowls.
  8. Top each bowl with the spicy shrimp and garnish with fresh cilantro.

Notes

  • Adjust the spice level by adding more chili powder.
  • This dish pairs well with avocado slices.
