Stir Fried Green Beans and Quinoa

Ingredients

  • 1 cup quinoa
  • 2 cups green beans, trimmed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon soy sauce
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes.
  3. While the quinoa is cooking, heat olive oil in a large skillet over medium heat.
  4. Add minced garlic and sauté for 1 minute.
  5. Add green beans to the skillet and stir-fry for about 5 minutes until tender.
  6. Stir in cooked quinoa and soy sauce, and season with salt and pepper.
  7. Cook for an additional 2 minutes, then serve warm.
