  • 1 cup fresh strawberries, pureed
  • 1 cup unsalted butter, at room temperature
  • 4 cups powdered sugar
  • 1/4 cup strawberry puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix the flour, sugar, baking powder, and salt together.
  3. Add the softened butter, milk, egg, vanilla extract, and strawberry puree to the dry ingredients, mixing until well combined.
  4. Pour the batter into the prepared cupcake liners, filling them about 3/4 full.
  5. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cupcakes to cool completely before frosting.
  7. For the frosting, beat the butter until creamy, then gradually add in the powdered sugar.
  8. Add strawberry puree and vanilla extract, mixing until smooth and fluffy.
  9. Frost the cooled cupcakes with the creamy strawberry buttercream.
