Strawberry Lemon Oat Bars

These Strawberry Lemon Oat Bars are the perfect combination of sweet and tart, making them a delightful treat for any occasion.

Ingredients

  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup strawberry jam
  • 1/2 cup fresh strawberries, diced
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine oats, flour, brown sugar, melted butter, salt, and baking soda.
  3. Press half of the oat mixture into the bottom of a greased baking dish.
  4. Spread the strawberry jam over the oat base, then top with diced strawberries and lemon zest.
  5. Sprinkle the remaining oat mixture on top of the strawberries.
  6. Bake for 25-30 minutes until golden brown.
  7. Let cool before cutting into bars.
