Strawberry Shortcake Cheesecake

This delicious Strawberry Shortcake Cheesecake combines the flavors of traditional strawberry shortcake with the creamy texture of cheesecake, making it the perfect dessert for summer gatherings.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup sugar
  • 3 large eggs
  • 16 oz cream cheese, softened
  • 1 cup heavy cream
  • 2 cups fresh strawberries, sliced
  • ¼ cup strawberry jam

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a separate bowl, beat together cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crust and bake for 40-45 minutes.
  7. Allow to cool completely before refrigerating for at least 4 hours.
  8. Before serving, whip heavy cream until stiff peaks form and spread it over the cheesecake.
  9. Top with sliced strawberries and drizzle with strawberry jam.

Notes

  • For an extra touch, garnish with mint leaves.
  • This cheesecake can also be made a day in advance.
