Stuffed Pepper Soup

A hearty and delicious Stuffed Pepper Soup that combines the flavors of stuffed peppers in a warm, comforting bowl. Perfect for a quick weeknight dinner!

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup uncooked rice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and chop.
  2. In the same pot, sauté onion, green pepper, and red pepper until soft.
  3. Add garlic and cook for 1 minute.
  4. Stir in ground turkey and cook until browned.
  5. Add diced tomatoes, chicken broth, rice, and seasonings.
  6. Bring to a boil, then reduce to a simmer. Cover and cook until rice is tender.
  7. Stir in chopped turkey bacon and season to taste.
