- 1 pound ground turkey
- 4 slices turkey bacon
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes, undrained
- 4 cups chicken broth
- 1 cup uncooked rice
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- In a large pot, cook turkey bacon until crispy. Remove and chop.
- In the same pot, sauté onion, green pepper, and red pepper until soft.
- Add garlic and cook for 1 minute.
- Stir in ground turkey and cook until browned.
- Add diced tomatoes, chicken broth, rice, and seasonings.
- Bring to a boil, then reduce to a simmer. Cover and cook until rice is tender.
- Stir in chopped turkey bacon and season to taste.
