  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 4 large eggs
  • 16 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 cups fresh peaches, sliced
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs with melted butter and sugar. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth, then add sugar and eggs one at a time, mixing well after each addition.
  4. Add the sour cream and mix until fully combined.
  5. Gently fold in peaches and raspberries.
  6. Pour the cheesecake mixture over the crust and spread evenly.
  7. Bake for 50-60 minutes or until set.
  8. Let cool and refrigerate for at least 4 hours before serving.
