Sweet Potato Taco Bowl

A delightful combination of sweet potatoes and turkey bacon makes this taco bowl a delicious and healthy meal option.

  • 2 cups diced sweet potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado, diced
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with a drizzle of olive oil, salt, and pepper.
  3. Spread them on a baking sheet and roast for about 25 minutes or until tender.
  4. In a skillet, cook the chopped turkey bacon until crispy.
  5. In a large bowl, combine roasted sweet potatoes, turkey bacon, black beans, corn, chili powder, and cumin. Mix well.
  6. Serve in bowls topped with diced avocado and crumbled feta cheese.

Notes

  • For added flavor, consider adding fresh cilantro or jalapeños.
