Trinidad Chicken Pelau Bowl

Ingredients

  • 2 cups long-grain rice
  • 1 pound chicken, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, chopped
  • 1 cup pigeon peas or green peas
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon fresh thyme
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the chicken pieces and brown them on all sides.
  3. Remove the chicken and set it aside.
  4. In the same pot, add onion, garlic, bell pepper, and carrot. Sauté until softened.
  5. Stir in the rice and coat it with the vegetable mixture.
  6. Add chicken broth, soy sauce, thyme, allspice, salt, and black pepper. Bring to a boil.
  7. Return the chicken to the pot and reduce heat to low.
  8. Cover and simmer for about 20-25 minutes or until rice is cooked and liquid is absorbed.
  9. Fluff with a fork and stir in the pigeon peas.

Notes

  • For added flavor, marinate the chicken in spices overnight.
  • Feel free to substitute vegetables based on what you have on hand.
