- 2 cups long-grain rice
- 1 pound chicken, cut into pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, chopped
- 1 cup pigeon peas or green peas
- 2 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 tablespoon fresh thyme
- 1 teaspoon allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Heat vegetable oil in a large pot over medium heat.
- Add the chicken pieces and brown them on all sides.
- Remove the chicken and set it aside.
- In the same pot, add onion, garlic, bell pepper, and carrot. Sauté until softened.
- Stir in the rice and coat it with the vegetable mixture.
- Add chicken broth, soy sauce, thyme, allspice, salt, and black pepper. Bring to a boil.
- Return the chicken to the pot and reduce heat to low.
- Cover and simmer for about 20-25 minutes or until rice is cooked and liquid is absorbed.
- Fluff with a fork and stir in the pigeon peas.

- For added flavor, marinate the chicken in spices overnight.
