- 1 pound ground turkey
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 tomato, diced
- 1 lime, juiced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1 head of lettuce, chopped
- In a large skillet, brown the ground turkey over medium heat.
- Add the cumin, chili powder, and salt, stirring to combine.
- Once cooked, add the black beans and corn to the skillet, mixing well.
- In a large bowl, combine the chopped lettuce, diced bell pepper, avocado, and tomato.
- Add the turkey mixture to the bowl and squeeze lime juice on top.
- Toss all ingredients together and serve.
Notes
- Serve with tortilla chips for added crunch.
