Turkey Black Bean Taco Salad

A delicious and healthy twist on taco night!

Ingredients

  • 1 pound ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 tomato, diced
  • 1 lime, juiced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 head of lettuce, chopped

Instructions

  1. In a large skillet, brown the ground turkey over medium heat.
  2. Add the cumin, chili powder, and salt, stirring to combine.
  3. Once cooked, add the black beans and corn to the skillet, mixing well.
  4. In a large bowl, combine the chopped lettuce, diced bell pepper, avocado, and tomato.
  5. Add the turkey mixture to the bowl and squeeze lime juice on top.
  6. Toss all ingredients together and serve.

Notes

  • Serve with tortilla chips for added crunch.
  • Can be stored in the refrigerator for up to 3 days.
