Turkey Taco Stuffed Sweet Potatoes

  • 4 large sweet potatoes
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork, then bake for 45 minutes or until tender.
  3. In a skillet, heat olive oil over medium heat, add ground turkey and cook until browned.
  4. Stir in taco seasoning, black beans, corn, and diced tomatoes, cooking until heated through.
  5. Once sweet potatoes are cooked, cut them open and fluff the insides with a fork.
  6. Spoon the turkey mixture into the sweet potatoes.
  7. Top with shredded cheese, cilantro, and avocado slices.
  8. Season with salt and black pepper to taste.

Notes

  • You can customize toppings with sour cream or additional salsa.
