Tuscan Chickpea Soup

Ingredients

  • 2 cups canned chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • salt to taste
  • pepper to taste
  • 2 cups kale, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery, cooking until softened, about 5-7 minutes.
  3. Stir in garlic and cook for an additional minute.
  4. Add broth, chickpeas, diced tomatoes, thyme, rosemary, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in kale and cook until wilted, about 5 minutes.
  7. Stir in lemon juice and serve hot.

Notes

  • For a creamier soup, blend a portion of the soup and stir it back in.
  • Adjust seasonings to your taste.
