Tuscan White Bean Soup

A warm and hearty Tuscan White Bean Soup with the delightful addition of turkey bacon.

Ingredients

  • 1 cup dry white beans
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cups kale, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse and soak the white beans overnight.
  2. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  3. Add onions and garlic to the pot and sauté until softened.
  4. Drain the beans and add them to the pot along with the broth, oregano, and thyme.
  5. Bring to a boil, then reduce heat and simmer until beans are tender.
  6. Add kale, bacon, salt, and pepper, and cook until kale is wilted.
  7. Serve warm and enjoy!

Notes

  • For a thicker soup, use an immersion blender to partially blend the beans.
  • Feel free to add other vegetables like carrots or celery.
