Tuscan White Bean Soup

A warm and comforting Tuscan White Bean Soup made with turkey bacon for a delightful twist.

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups spinach

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add diced onion to the pot and sauté until translucent.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add the white beans, vegetable broth, diced tomatoes, thyme, and rosemary. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes.
  6. Stir in the spinach and cook until wilted.
  7. Crumble the turkey bacon over the soup before serving.
