- 4 large russet potatoes
- 6 strips turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup milk
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork. Bake for 45-60 minutes, until tender.
- Meanwhile, cook the turkey bacon in a skillet until crispy. Remove and chop.
- Once the potatoes are done, let them cool slightly. Cut them in half and scoop out the insides into a bowl.
- Add the sour cream, milk, cheese, garlic powder, salt, black pepper, and half of the green onions to the potato insides. Mix well.
- Fold in the chopped turkey bacon.
- Stuff the potato skins with the mixture.
- Return to the oven and bake for an additional 15-20 minutes, until heated through and cheese is melted.
- Garnish with remaining green onions before serving.
Notes
- For a spicier version, add jalapeños to the filling.
- These can be made ahead of time and reheated.
