These Twice Baked Loaded Breakfast Potatoes are a delicious and indulgent twist on a classic dish, featuring turkey bacon and a hearty filling.

  • 4 large russet potatoes
  • 6 strips turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake for 45-60 minutes, until tender.
  3. Meanwhile, cook the turkey bacon in a skillet until crispy. Remove and chop.
  4. Once the potatoes are done, let them cool slightly. Cut them in half and scoop out the insides into a bowl.
  5. Add the sour cream, milk, cheese, garlic powder, salt, black pepper, and half of the green onions to the potato insides. Mix well.
  6. Fold in the chopped turkey bacon.
  7. Stuff the potato skins with the mixture.
  8. Return to the oven and bake for an additional 15-20 minutes, until heated through and cheese is melted.
  9. Garnish with remaining green onions before serving.

Notes

  • For a spicier version, add jalapeños to the filling.
  • These can be made ahead of time and reheated.
