Ingredients

  • 1 cup black beans, cooked
  • 1 avocado, diced
  • 1 bell pepper, chopped
  • 1 small onion, diced
  • 2 tortillas, corn or flour
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a skillet over medium heat, sauté the onion and bell pepper until soft.
  2. Add the black beans, cumin, chili powder, and salt. Cook for another 5 minutes.
  3. Warm the tortillas in a separate pan.
  4. Fill each tortilla with the bean mixture, topped with diced avocado and cilantro.
  5. Serve warm.

Notes

  • For extra flavor, add lime juice to the avocado.
