9 sheets lasagna noodles
2 cups ricotta cheese
3 cups mixed vegetables (spinach, zucchini, bell peppers)
2 cups marinara sauce
2 cups mozzarella cheese, shredded
1 cup parmesan cheese, grated
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat your oven to 375°F (190°C).
In a pan, heat olive oil and sauté garlic until fragrant.
Add mixed vegetables, oregano, salt, and pepper; cook until softened.
In a baking dish, spread a layer of marinara sauce.
Layer lasagna noodles, followed by ricotta cheese, sautéed vegetables, and mozzarella cheese.
Repeat the layering process, finishing with marinara sauce and mozzarella on top.
Sprinkle parmesan cheese over the top layer.
Cover with foil and bake for 30 minutes.
Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
Let it cool for 10 minutes before serving.
Notes
For extra flavor, consider adding Italian herbs into the layers.
