Ingredients

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups mixed vegetables (frozen or fresh)
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into pieces.
  2. Add olive oil to the pot, then sauté the onion, carrots, and celery until tender.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the diced tomatoes, vegetable broth, thyme, and oregano. Bring to a boil.
  5. Reduce heat and add the mixed vegetables and chopped turkey bacon. Simmer for 20 minutes.
  6. Season with salt and pepper before serving.
