White Chicken Lasagna Soup

  • 1 tablespoon olive oil
  • 1 pound cooked chicken, shredded
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  2. Add shredded chicken and Italian seasoning, stirring to combine.
  3. Pour in chicken broth and bring to a boil.
  4. Add broken lasagna noodles and cook until al dente.
  5. Stir in heavy cream, ricotta, and mozzarella until well combined and cheese is melted.
  6. Season with salt and pepper to taste. Serve warm with a sprinkle of Parmesan cheese on top.

Notes

  • This soup can easily be modified by adding vegetables like spinach or mushrooms.
  • To make it spicier, add crushed red pepper flakes.
