  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 1 can (15 oz) diced tomatoes
  • 6 cups chicken broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 2 cups chopped kale
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 cups pasta, small shapes like ditalini

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and chop into pieces.
  2. Add the onion and garlic to the pot, cooking until softened.
  3. Stir in carrots and celery, cooking for another 5 minutes.
  4. Add diced tomatoes and chicken broth. Bring to a boil.
  5. Stir in cannellini beans and seasonings, then add the pasta.
  6. Cook until pasta is al dente, then stir in kale and turkey bacon.
  7. Serve hot, garnished with parmesan if desired.

Notes

  • For a vegetarian option, substitute turkey bacon with smoked tempeh.
