- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, sliced
- 1 can (15 oz) diced tomatoes
- 6 cups chicken broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 2 cups chopped kale
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 cups pasta, small shapes like ditalini
- In a large pot, cook the turkey bacon over medium heat until crisp. Remove and chop into pieces.
- Add the onion and garlic to the pot, cooking until softened.
- Stir in carrots and celery, cooking for another 5 minutes.
- Add diced tomatoes and chicken broth. Bring to a boil.
- Stir in cannellini beans and seasonings, then add the pasta.
- Cook until pasta is al dente, then stir in kale and turkey bacon.
- Serve hot, garnished with parmesan if desired.
