Winter Minestrone Soup

A warm and hearty winter minestrone soup featuring turkey bacon and chicken ham, perfect for cozy nights.

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 cup macaroni pasta
  • 2 cups kale, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into pieces.
  2. In the same pot, add olive oil, onion, carrots, celery, and garlic. Sauté until vegetables are tender.
  3. Add chicken broth, diced tomatoes, and kidney beans. Bring to a boil.
  4. Stir in macaroni and kale, reduce heat, and simmer for 10-12 minutes, until pasta is cooked.
  5. Return chopped turkey bacon to the pot, and season with oregano, salt, and pepper. Serve hot.

Notes

  • Feel free to add any vegetables you have on hand.
  • For extra flavor, consider adding fresh herbs.
