Zesty Quinoa Lime Salad with Black Beans

A refreshing and nutritious Zesty Quinoa Lime Salad packed with black beans and lime flavor.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • 2 green onions, sliced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  4. Remove from heat and let it sit for 5 minutes. Fluff with a fork.
  5. In a large bowl, combine quinoa, black beans, bell pepper, avocado, cilantro, lime juice, green onions, cumin, salt, and pepper.
  6. Toss gently to combine.
  7. Serve chilled or at room temperature.

Notes

  • For extra flavor, add jalapeños for a spicy kick.
