Asian Cucumber Salad

Ingredients

  • 2 large cucumbers
  • 1 tablespoon salt
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon chili oil
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Wash the cucumbers and slice them thinly.
  2. Sprinkle salt over the cucumbers and let them sit for 20 minutes.
  3. In a separate bowl, mix rice vinegar, soy sauce, sesame oil, sugar, and chili oil.
  4. Rinse cucumbers under cold water and drain well.
  5. Combine cucumbers with the dressing and toss to coat.
  6. Add sliced green onions and sesame seeds, then mix well.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes
